These protein-packed Chick*n tacos are the perfect, quick and easy mid-week meal.
Ingredients
- 1 pack VFC chilled Chick*n Mince
- 1 tbsp light olive oil
- 1 red pepper, finely diced
- 1 clove garlic, chopped
- 2-4 tsp taco seasoning mix (or fajita seasoning)
- Few handfuls of crunchy lettuce (such as Iceberg, Cos, Romaine or Gem), finely shredded
- 2 spring onions, thinly sliced
- 2 red chillies, sliced
- A few sprigs fresh coriander, chopped
- 8-12 mini soft tacos
- Guacamole
- Pink pickled onions
Method
- Heat 1 tbsp of the oil in a large frying pan and fry the VFC Chick*n Mince with the peppers for a few minutes, until golden.
- Add the garlic and taco seasoning and fry for another minute or so over low heat.
- Meanwhile, chop the rest of the toppings and warm the mini tacos in a dry frying pan or microwave.
- Pop all the toppings into bowls and eat family-style, letting everyone load their own tacos! We recommend adding a little lettuce to each warm taco then piling on some of the VFC Chick*n Mince mixture. Add a dollop of guacamole and a few pink onions then sprinkle on some chillies, spring onions and coriander to finish.
