Ingredients
- 1 pack VFC Popcorn Chick*n
- 6 Bao Buns
- 3 tbsp vegan mayonnaise
- 2 tbsp gochujang or other chilli sauce
- 1 small red onion, very thinly sliced
- 10cm piece cucumber, thinly sliced
- Few sprigs coriander, roughly chopped
- ½ lime (or lemon)
- 1 tsp sesame seeds or black sesame seeds
- Kimchi
Method
- Cook the VFC Popcorn Chick*n according to the pack instructions
- Mix the mayo with about 1 tsp gochujang or chilli sauce. In another bowl mix the red onion, cucumber and coriander and squeeze over a little lime juice
- When the VFC popcorn is ready, warm the bao buns according to the instructions then add a little spicy mayo to each
- Add some popcorn chick*n to each bao bun then add some of the red onion and cucumber mix. Drizzle over some extra gochujang or chilli sauce and add a pinch of sesame seeds. Serve warm with the kimchi on the side
